Toast the kataifi: Heat ghee in a wide pan over medium heat. Add the kataifi, separating the strands as you go. Toss continuously until golden and crispy — approximately 8–12 minutes. The moment it turns uniformly golden, remove from heat immediately and spread on a baking tray to cool completely. This step cannot be rushed.

Make the pistachio cream: Combine pistachio paste, tahini, icing sugar, and a pinch of salt in a bowl. Mix until smooth and homogeneous. The filling should be thick but spreadable — if too stiff, add 1 tsp neutral oil. Taste and adjust sweetness.

Fold in kataifi: Once the toasted kataifi is completely cool, fold two-thirds of it through the pistachio cream mixture. Reserve the remaining third. Work quickly so the residual heat from your hands doesn't warm the filling.

Temper the chocolate: Melt chocolate to 50°C (milk) or 55°C (dark). Cool to 27°C by stirring over a cold surface or adding seed chocolate. Rewarm to 31°C (milk) or 32°C (dark). Test on a cool surface — properly tempered chocolate will set glossy within 2 minutes.

Mould and fill: Coat bar moulds with tempered chocolate and let set (approximately 5 minutes). Fill each mould two-thirds full with the pistachio-kataifi filling. Seal with a final layer of tempered chocolate. Tap the moulds to remove air bubbles and refrigerate for 15 minutes.

Demould and rest: Remove bars from moulds once fully set. Store at room temperature, not in the refrigerator — the condensation from chilling will cause surface bloom. Consume within 2 weeks for best texture.

Tips from Someone Who's Made a Lot of These

A chocolate thermometer is non-negotiable. The tempering temperature windows are narrow — even a few degrees off will mean untempered chocolate that won't snap and will bloom within days.

Source ingredients from specialist suppliers. Supermarket pistachio spread is not pistachio paste. Baking chocolate is not couverture. Middle Eastern grocery stores will have fresh kataifi. Online baking suppliers sell the right chocolate.

Cool the kataifi completely before adding to the cream. This is the most common mistake. Even slightly warm kataifi will absorb moisture from the pistachio cream and lose its crunch within hours.

The filling should be approximately 60% of the bar volume. More filling than this and the bar won't hold its structure. Less and you lose the balance that makes the original so satisfying.

The Honest Assessment

A well-executed homemade version is genuinely delicious and worth making as a kitchen project. But the honest truth is that even an excellent DIY bar will not taste exactly like a FIX bar — the specific pistachio paste, the Belgian couverture recipe, the kataifi ratio, and two years of recipe iteration are not things you can replicate from a single attempt.
