These are important questions. We want to answer all of them in one place, clearly and completely — because the ingredients in a FIX bar are something we are genuinely proud of, and because understanding what you are eating is a reasonable thing to expect from any food brand.

Why the Ingredients Are Different Here

Before we get into numbers, it is worth understanding what distinguishes a FIX bar's ingredient list from a standard supermarket chocolate bar — because the comparison explains both the flavour difference and the calorie profile.

A standard chocolate bar's weight is almost entirely chocolate. A FIX bar is roughly half Belgian couverture chocolate shell and half a dense, calorie-rich pistachio kunafa filling. That filling contains pure pistachio paste, tahini, and toasted kataifi pastry — three ingredients that are each calorie-dense and nutrient-rich in their own right.

Pistachios are among the most nutritionally complete nuts — high in protein, healthy fats, fibre, B vitamins, and antioxidants. Tahini (sesame paste) adds further healthy fats, calcium, and iron. Kataifi pastry contributes carbohydrates and the structural crunch. The chocolate shell provides cocoa flavanols alongside its fat and sugar content.

The result is a bar that is calorically substantial — this is not low-calorie food and we will not pretend otherwise — but one whose calories come from real, recognisable ingredients rather than artificial fillers, flavourings, or cheap fats.

Belgian Couverture Chocolate

High-quality chocolate made with a minimum 31% cocoa butter, giving it the fluidity needed for shell molding and the melt-in-the-mouth texture that separates couverture from compound. We use both milk (typically 33–38% cocoa) and dark (typically 55–72% cocoa) varieties depending on the bar. No palm kernel oil. No artificial flavours. Cocoa mass, cocoa butter, sugar, milk solids (in milk chocolate), vanilla.

Pure Pistachio Paste

100% ground pistachios — no added sugar, no emulsifiers, no oil padding. The paste provides natural colour (that distinctive green), genuine pistachio flavour, and significant nutritional value: protein, monounsaturated fats, vitamin B6, potassium, and antioxidants. A single bar contains a meaningful amount of nut content by weight.

Tahini (Sesame Paste)

Ground sesame seeds, used to add silkiness, depth, and a subtle nutty undertone to the pistachio cream. Tahini is a cornerstone of Middle Eastern cooking and a nutritional powerhouse — calcium, iron, zinc, selenium, and healthy unsaturated fats. It is also what makes the filling smooth rather than crumbly. Contains sesame — a declared allergen.

Shredded wheat phyllo pastry, toasted in butter to a deep golden crisp. The source of the bar's signature crunch and the element that makes it distinctively "knafeh." Ingredients: wheat flour, water, salt, butter (milk). Contains gluten and dairy. The toasting process is critical — it is what keeps the kataifi crispy inside the bar for months rather than softening within hours.

A small but important finishing element on select bars. Salt amplifies sweetness, balances the richness of pistachio and chocolate, and adds a subtle textural pop at the surface. Used in restraint — the goal is enhancement, not salted chocolate as a concept.
